When it comes to desserts, there are a variety of recipes, from sophisticated cakes to traditional desserts that remind us of childhood. To impress with a flavorful and delicious dessert, you can try quince jam cake, an easy-to-prepare recipe with unique ingredients that transform a simple cake into a real delight.

Step 1

Start by preheating the oven to 180°C. Place a baking sheet on a tray and grease it with butter or oil, depending on your preference.

Step 2

In a large bowl, using a mixer, beat the eggs with the sugar, vanilla sugar, and salt until you obtain a foamy and homogeneous mixture.

Step 3

Gradually add the yogurt, vanilla essence, and sunflower oil to the mixture and continue to blend.

Step 4

Gradually incorporate the flour and baking powder into the mixture. Be careful not to form lumps. You can also add ground walnuts at this point if you want an extra flavor. Mix until all the ingredients are well combined.

Pour all of the resulting mixture into the prepared pan and use a spatula to level it.

Place the tray in the preheated oven and bake the cake for about 20 minutes or until the edges turn slightly golden.

After the cake is lightly browned on the edges, remove the pan from the oven and add the quince jam in an even layer over the surface of the cake.

Here is the list of ingredients that will help you get a special quince jam cake:

250 g of sugar (or flavors and sweeteners , according to preference);
250 g of flour;
3 eggs;
100 ml of sunflower oil or cooking spray ;
200 g of yogurt;
1 teaspoon of baking powder;
1 sachet of vanilla sugar;
protein powder , according to preference;
1 pinch of salt;
1 vanilla essence;
100 g of walnut kernels;
1 jar of quince jam;

Who says those who are fasting can't enjoy a delicious sponge cake? Well, the quince jam cake recipe can be made without any problems in this case too!

For starters, margarine and mineral water will take the place of ingredients that are not consumed during fasting.

Then, for the filling, mix the quince jam with cinnamon, ground walnuts, and, optionally, raisins. Make sure the ingredients are well incorporated.

For the dough, put the soft margarine and vanilla sugar in a deep bowl and mix until you get a creamy texture. Add the flour, baking powder and a pinch of salt, then the oil. Gradually add the mineral water and mix well until you get a homogeneous dough. If necessary, add a little flour until the dough is no longer sticky and can be easily handled. Then, knead the dough until it becomes slightly elastic and can be stretched into thin sheets. It should not stick to your hands. Finally, divide it into three equal parts.

To assemble the cake, you will need to roll out each piece of dough on a floured surface until you have thin sheets the size of the pan. Place the first sheet of dough in a pan greased with margarine and lined with baking paper. You can use a fork to remove it. Now it's time to spread half of the quince jam evenly over the sheet of dough. Now, cover with the second sheet of dough stretched out and fill with the rest of the quince jam. Finally, place the last thin sheet of dough.

Bake the cake in a preheated oven at 180°C for about 30-35 minutes, until golden brown. Once the cake is baked, remove it from the oven and let it cool in the pan. If you want to add glaze, you can melt the bittersweet chocolate and pour it over the baked sponge cake. You will get a delicious quince jam cake for Lent!
